It's a common snack, especially in the summer during peanuts season.
Peanuts 1 lb
Ginger 1 cm, slice
Green onion 3 cm, slice
Star anise 1
Salt, 1/2 tablespoon (up to your taste)
Si Chuan Pepper 1 teaspoon (up to your taste)
. Put lots of water in a pressure cooker until the peanuts are well covered.
. Cook for 1/2 hr
NOTE: This will make tender peanuts. If you like tough peanuts, you can just boil it with regular pot for 30 mins.
