Fish Boiled in the Water ˮ



A famous Si Chuan dish. Very hot and firing, but very delicious. The fish can be substituted with slices of other meat such as beef or pork.

Step by step recipe

Ingredients:
Fish 1 (could be tilapia or others)
Bean sprout 1 cups. Others like to add oyster mushroom or other green veggie. That's fine.
(Si Chuan pepper) 1 cup
Dry hot pepper 1 cup
Salt
White egg 1
White pepper
Cornstarch 1 tablespoon
Garlic 5 cloves, slice
Ginger 5 cm slices
Wine 1/4 cup
Water 2 cups
Hot bean sauce 1 tablespoon
Coriander for garnish
To make it hotter can add crushed hot pepper


Direction:
1. Slice the fish thinly. Has to be thinly for better taste. Marinate with half the garlic, half the ginger, wine, white pepper, white egg, salt. Let it sit at least 20 mins.
2. Put about 2 tablespoon oil in a wok. When the oil is hot put the remaining of garlic and ginger and half the Si Chuan pepper and half the dry hot pepper. When the smell turns really good (be careful not to burn them!) add the hot bean sauce and saute a few minutes
3. Add water, add the fish bones and tail, when the water boils add the slices of fish, cook for a few minutes, done.
4. In a bowl, put the bean sprout (or other veggie). Pour the fish mixture.
5. Put oil in a wok until it's hot put the remaining hot stuff and pepper, when the smell is good, pour on top of the fish mixture and vegetable
