You can cook all types of meat for this dish. For example: the delicious fatty pork belly, chicken drumstick, pork shank, chicken wings, chicken feet like in the dim sum, etc.

You can also add other non meat materials like potatoe, mushroom and so on.

tang cu yu Tang Cu Yu (Fish Braised with soy sauce)


Fish (could be tilapia or chao yu) 1 (around 2.5lb)
Soy sauce 2/3 cup
Vinegar 1/3 cup
Wine 1/3 cup
Water 2 cups
Da chong 10 cm
Ginger 2 cm , slice
Star anise 2
Garlic 3 cloves, peeled
Shan Zha 5 , if available
Sugar 3 tablespoon
Salt



Directions:
. Deep fry the fish for 5 minutes. This step is optinal, but they say it'll remove the fishy smell of the fish. . Stir fry ginger, garlic and da chong with 1 tablespoon of oil for about 3 minutes
. Put fish back in the pot and all other ingredients except salt and sugar. Be sure to put enough water, see photo.
. Cover and cook for 45 minutes. Occasionally turn to ensure the taste is evenly distributed on both sides.
. Add salt and sugar
. Cook again for additional 5 minutes.



Hong Shao Chicken Feet(Chicken Feet Braised with soy sauce)


Chicken Feet Braised with soy sauce


Chicken feet (around 2.5lb)
Soy sauce 2/3 cup
Vinegar 1/3 cup
Wine 1/3 cup
Da chong 10 cm
Ginger 2 cm , slice
Star anise 2
Garlic 3 cloves, peeled
Shan Zha , if available
Sugar 3 tablespoon
Salt



Directions:
. Put chicken feet in a pot, put water until all are immersed under water. Put sauces and all other spices EXCEPT sugar in, boil.If using pressure cooker 30 minutes is enough. Without pressure cooker, try 1 hour. . Add sugar and salt, cook more for 10 minutes with lower fire.


Hong Shao Pork Shank(Pork Shank Braised with soy sauce)

. Same ingredients. Use pressure cooker, add water so the shank is covered by water. Cook 30 mins.
. Open to check if there's enough water. Add salt, recook for 25 minutes.
Add sugar, cook for additional 5 mins.
