Oyster Mushroom with Egg


Note:
.I put 1/2 lb for the amount of mushroom, but usually I use more since I really like the mushroom more than the egg!

.Tips for living in China: Oyster mushroom is really common and tastes really good. Be sure to try it! If you don't like egg, simple stir fry without egg and tomatoe also works very well. If you buy in local public market, I think, is fresher.

. Garnish with cilantro for taste enhancement


INGREDIENTS:
Egg 2
Oyster mushroom 1/2 lb
Tomatoe 1
Ginger 1 cm , slice
Green onion 10 cm
Sugar 1 tablespoon
Salt



Directions:
. Wash mushrooms well and cut.
. Beat the eggs and fry. Set aside. br> . Stir fry green onion and ginger for 1 minute then add the mushrooms
. Keep folding the mushrooms to ensure all are stir fried. In about 5 minutes, put tomatoe in. Keep folding and stirring. If getting too dry, add water a bit by a bit (about 1 tablespoon each).
. Cover but occasionally open to check and stir for 20 minutes
. Add fried eggs. Keep folding and stirring to break the eggs apart. Cook for 5 more minutes.
. Add sugar. Tomato is sour so the sugar is used to neutralize the sourness of the tomato. If you don't like it to be too sweet, put less sugar.
