Green onion 10 cm

Shan Zha (you can use lemon too) 5
Vinegar 1 tablespoon (to tenderize the meat)

. To remove the beef smell, put oxtail in a pot, add water, boil. When the water boils, throw away and change the water with new one. Some people like to add 2 tablespoon of vinegar.
. Use pressure cooker. Put oxtail, water until all pieces are covered by water, shan zha, vinegar. Cook for 30 minutes.
. Open the pressure cooker. Be careful, really hot. You can either let it sit for a few minutes or put the pressure cooker under cold water then open it.
.Put cut of tomatoe, carrot, potatoe, salt
. Cook again for additional 30 minutes.
. Garnish with coriander for better result. Throw away all floating oil.
