There are tens of different types of tofu in China of variuos color (yellow, white, brown, black...) and texture (soft, hard, square, round, shredded...). Absolutely impressive. My recipes below only touch the common white tofu...

Tofu with Mushroom

A very simple dish but really delicious and focus on the taste of tofu.


Ingredients:
White Tofu 1 lb
Ginger 3 slices
Green onion 2 cm, slice
Mushroom (any) 1 cut really small
Salt, 1/2 tablespoon (up to your taste)
Si Chuan Pepper 1 teaspoon (up to your taste)


Direction:
. Cut tofu into cubes, boil. When water boils, turn of water, set aside.
. Stir fry ginger and green onion until smelss good then add mushroom. Saute briefly then add the tofu. Stir fry for a few minutes when too dry add water bit by bit.




Fried Tofu with Dry Mushroom and Celery

Ingredients:
White Tofu 1 lb
Ginger 3 slices
Green onion 2 cm, slice
Dry Mushroom 1, cut really small
Celery 3 stalks, cut
Salt, 1/2 tablespoon (up to your taste)
Si Chuan Pepper 1 teaspoon (up to your taste)


Direction:
. Slice tofu to, say 3x5cm (see photo).
. Add oil in the wok, deep fry tofu for 3 minutes (golden brown). Lift, and drain the oil well, set aside.
. Stir fry ginger and green onion until smells good then add mushroom. Saute briefly then add the celery. Stir fry for a few minutes then add the fried tofu, when too dry add water bit by bit.
